Healthy Vegetarian Nachos

Ingredients

  • 1 large bag corn chips or tortilla chips

  • 1½ cups cooked black beans (or canned, rinsed)

  • 1 cup cherry tomatoes or diced tomato

  • ½ red onion, finely diced

  • ½ cup guacamole or smashed avocado

  • 1 cup Bekaa Dairy Labneh (as a healthy sour cream alternative)

  • 1 fresh lime, cut into wedges

  • Fresh coriander leaves

  • 1–2 fresh green chillies or jalapeños, sliced

  • Optional: grated cheese or pickled onions

Method

  1. Preheat the Oven (Optional):
    If you like your nachos warm, spread chips on a baking tray and heat for 5–8 minutes at 180°C.

  2. Layer it Up:
    Arrange chips on a serving platter or tray. Top with black beans, diced tomatoes, red onion, and dollops of guacamole.

  3. Add the Star:
    Spoon generous dollops of Bekaa Dairy Labneh over the nachos — it’s creamy, tangy, and a deliciously healthy upgrade from sour cream.

  4. Finish & Serve:
    Top with coriander, chillies, and a squeeze of fresh lime. Serve immediately and enjoy with mates!
