Akawi Cheese & Spinach Triangles

Ingredients:

  • 1 cup Bekaa Dairy Akawi Cheese (crumbled)

  • 300g fresh spinach (or frozen spinach, thawed and drained)

  • 1 small onion, finely chopped

  • 2 tablespoons olive oil

  • 2 garlic cloves, minced

  • 1/2 teaspoon ground nutmeg

  • Salt and pepper to taste

  • 1 pack of filo pastry (about 8 sheets)

  • 1 egg (for egg wash)

  • 2 tablespoons melted butter or olive oil (for brushing)

Instructions:

  1. Prepare the Filling:
    Heat olive oil in a pan over medium heat. Add the chopped onion and sauté until soft and golden, about 5 minutes. Add the minced garlic and cook for another minute until fragrant. Stir in the spinach and cook until wilted (if using fresh) or warmed through (if using frozen). Season with salt, pepper, and nutmeg. Let the spinach mixture cool slightly, then stir in the crumbled Bekaa Dairy Akawi Cheese.

  2. Prepare the Pastry:
    Preheat the oven to 180°C (350°F). Lay a sheet of filo pastry on a clean surface and brush lightly with melted butter or olive oil. Place another sheet of filo on top and brush again. Repeat with 3-4 sheets of filo for each triangle.

  3. Assemble the Triangles:
    Cut the layered filo sheets into strips (about 4-5 cm wide). Place a spoonful of the spinach and cheese filling at one end of each strip. Fold the corner over the filling to form a triangle shape. Continue folding the pastry along the strip, keeping the triangular shape, until you reach the end of the filo sheet.

  4. Bake:
    Place the filled triangles on a baking tray lined with parchment paper. Brush the tops with an egg wash (beaten egg) for a golden finish. Bake in the preheated oven for 20-25 minutes, or until the triangles are crisp and golden brown.

  5. Serve:
    Let the triangles cool slightly before serving. They make a perfect snack, appetizer, or side dish!
